Well I took your advice and left a few whole. The cheese I used is called "fire jack". I stuffed them about 3/4 of the way full with that then topped them off with the cream cheese/chilli powder mix. I also got some peppered bacon from the deli for an extra touch. Yummy!

Harley, i do mine the exact same way, always tryin differant cheeses and stuff. except i have this cookie sheet with a raised grill on it (about 1/2 inch) this lets the bacon grease drip off and i think they are a little better this way. lets the bacon get a little more crisp to it.

I knew that if I didn't take the pictures early on in the cookin', that they weren't going to sit still long enough to be photographed. Boy was I right, they flew straight off the grill when I told the guys they were ready! I had to keep my own biscuit snatchers clear for fear I might end up w/ a plastic fork sticking out the back of one!

Yep, chicken thighs. It's a pain fix them up versus chicken breasts, but they are so much cheaper here. I stuff them with the same concoction in the poppers and wrap them up and broil them for about an hour on the grill then pull them and grill for a few minutes to finish them off.

On the right, that is just buffalo wings that had been marinaded in some jack daniels marinade.

I do several kinds of stuffed Jalapenos. One is raw version stuffed with a Cream Cheese Tuna Fish mixture. They are cut length ways and filled. Sounds weird but they are very good. Another is like above with just Cream Cheese and a little Coon *** seasoning. Third is really good. Hollow out and remove all the seeds, in a bowl empty about 1/2 can of sweet yellow corn and mash up. I have also use a blender to mash them. Add a package of Cream cheese and a pkg of shredded cheddar. Stuff, wrap with bacon and grill.

MrsCrusher just gettin started
yummy... this thread is making all hungry and i'm stuck at work with only a lean hot pocket to eat I like the way that javys' grandpa makes them but the only thing i do different is that i put some grilled onions usually in them or when i wrap the bacon i add a little strip of onion under the bacon. I bought this really nice popper cooker for the bbq pit and oven but i gave it to javys grandpa to be nice maybe i will pre-make a batch of these for the big shell trip.....

Well being that it is before lunch and ive been wanting to make some more poppers I decided to post how i do them and add on to what some other say about their way. Typing while my stomach is growling....lol

One way that I do it is I get a bowl, I then add crab meat (can be the artificial kind if you like) i dice it up to small little pieces (alot of work) once thats in the bowl I add bout half a small jar of picante sauce (hot mild your choice). I then add one thing of cream cheese and stir it up put on the peppers then wrap in bacon! these bad boys are good.

the next way i do it is i buy a block of colby jack cheese, cut it into slices however thick you want (usually 1/4 inch or so) I then take breakfast sausage and make little pattys or long rolls like tube bout the length of a jalapeno cook it till its almost done pretty much, I then put it together and wrap the bacon on. these are dang good too, I have also tried these with flavored cream cheese as well cant remember which on tho but they are good also.

The next is duck poppers, take a bowl put your cut duck breast in the bowl and marinate it with whatever you would like I usually do something along the lines of fresh crushed garlic, Worcestershire sauce however you spell it some liquid smoke and shiner . and usually some pepper and salt but really any of ur favorite liquid marinade. then whatever cheese you want ive used every combination including block cheese like above. I then add a sliver of onion or bell pepper between the duck and the cheese. they are pretty good but not as good to me as the above two. wrap in bacon

As far a glazing or "saucing" i actually think it is a good touch to poppers, i will grill them on the grill and before i pull them off i add a little sweet baby rays to the top and man it is good expecially with the breakfast sausage idk what it is but it is awesome...im one that likes flavors and i understand bbq sauce can mask flavor but in my opinion if you havnt tried it just do it to a couple and see if it changes your opinion....

well almost 12 time to get ready for lunch....

we use to make our own stuff burgers all the time...damn good it all stemmed from the HEB burgers with stuff in them and started making our own, we would do crazy stuff like with boudin and jalepenos and bell peppers and all kinds of stuff, blue cheese and your favorite hot sauce with onions bell peppers we went out and bought like 30 lbs of meat and made every combination you could think of and then we would put them in individual zip locks and label each one and what they had. we had like 20 types of cheese cubes. ate burgers every night for month straight just about lol didnt complain one bit it was different every night.

there is also such a device called a stuff-o-burger and i had one and we used it where it would actually leave a pocket to stuff and thats what we did for all 30lbs lol

Cream cheese , shredded cheddar cheese, bacon bits and maple syrup mixed up ... Thick bacon and off set smoke over you choise of wood... After done drizzle more maple syrup on them
